In the vinification of red grapes, alongside the grape variety, a crucial role is played by processing techniques – maceration of the pulp and fermentation of the must, during which the phenolic complex is transformed, providing the full taste and color of the wine. The aim of this study was to investigate the combined effect of cold maceration of the pulp and the use of Lachancea thermotolerans yeast in conjunction with Saccharomyces cerevisiae on the composition and chromatic characteristics of dry red wines. Maceration of sulfited Saperavi grape mash was carried out in a cold room at 4°C for 90 hours. Dry fermentation of the must was conducted using yeast strains isolated from Dagestan vineyards: S. cerevisiae in monoculture (control) and in combination with L. thermotolerans (experimental). It was demonstrated that, eight months after the completion of fermentation, the physicochemical composition of the experimental wines was consistent with the dry wine category. The given extract content was 18,0 g/dm³ for the control and 18,9 g/dm³ for the experimental sample; the higher acidity in the experimental sample (8,1 versus 6,7 g/dm³ in the control) was attributed to the activity of L. thermotolerans, which converts a portion of the sugars into lactic acid. The concentration of phenolic compounds in the wort, which increased from 972,0 to 3240,0 mg/dm³ following maceration, decreased during subsequent fermentation and storage, ultimately reaching 723,0 mg/dm³ in the control sample and 635,0 mg/dm³ in the experimental sample. In both samples, monomers accounted for 70,0% of the phenolic compound complex; anthocyanin levels were 66,0 mg/dm³ for the control and 70,0 mg/dm³ for the experimental sample. The optical density of the wines at 520 nm was 0,313 and 0,322 for the control and experimental samples, respectively. Given that the red component constituted over 50% of the overall color and the contribution of the red pigment exceeded that of the yellow by a factor of 1,6, it can be inferred that the red color stability of the wines is attributable to both monomeric anthocyanins extracted during cold maceration and their copigmentation products – including those formed with yeast metabolites during fermentation and storage. The samples had a rich ruby color with a purple tint, the taste was fresh, soft, with fruity and berry nuances characteristic of the variety.
