Thermophilus +Lactobacillus delbrueckii ssp.

Annotation:
The aroma profile of fermented milk beverages depends on the composition of starter cultures and requires instrumental monitoring, as existing chromatographic methods are labor-intensive and ill-suited for rapid industrial analysis. This study aimed to analyze the aroma of fermented milk beverages produced with different starter cultures using an «electronic nose» and to evaluate the feasibility of industrial monitoring for starter culture authenticity. The study samples included «Shchkhy» ayran (produced with a Str. thermophilus monoculture), yogurt (Str. thermophilus + Lactobacillus delbrueckii ssp. bulgaricus), and a «Probiotic» beverage (Str. thermophilus + Lactobacillus acidophilus + Bifidobacterium animalis subsp. lactis). Measurements were performed using a MAG-8 gas analyzer. It was found that shifting from a monoculture to a symbiotic pair (Str. Thermophilus + Lactobacillus delbrueckii ssp. Bulgaricus) increased the integral intensity of volatile compounds by approximately 10%; however, the qualitative aroma composition underwent a much more significant transformation. The difference between ayran and yogurt reached 75% in terms of the set of compound classes (alcohols, aldehydes, ketones, amines), whereas replacing L. delbrueckii ssp. bulgaricus with Lactobacillus acidophilus and bifidobacteria reduced this difference to 50%, and the disparity between integral «visual fingerprints» became statistically insignificant (7,3% compared to 16,2% for the ayran–yogurt pair). For the first time, out of 28 possible pairwise sensitivity parameters, eight (29%) were identified that effectively distinguish between the samples. The proposed approach enables the targeted control of the sensory profile of fermented dairy products through strain selection – without the use of artificial flavorings – and reduces analysis time, making the method suitable for the industrial verification of starter culture authenticity.
